I loved reading your post, being French !

Hi, Amy -- another to try is a Kir Framboise. Sub in creme de framboise (raspberry) for the casis and enjoy another flavor of yum! It was my favorite "mixer" with white wine when I lived in France. (If you're feeling festive and cosmopolitan, a mid-price prosecco works well for the bubbly version.)

I've never tried either with cider, so thanks for the tip!

I moved to Paris last year and I've started taking all my guest on the same excursion weekend: Beaune, Nuit Saint George, and Dijon. It was cold this past weekend, but the sun was shining and the wine was heavenly. The food and wine from the Côte d'Or is so good, and I have made cassis kirs a very regular part of my drinking routine. Most americans dont know kir or cassis because the black currant was banned in the US to protect the lumber industry, but it's (mostly) legal now and a splash of creme de cassis goes well over ice cream, waffles, crepes, yogurt, etc.

Since I cannot tolerate alcohol I am reduced to drinking Ribena with Sprite for a faux Kir Royale. Pathetic, I know, but it was my tipple of choice during our two years in Beijing where the Ribena and Sprite were easily available. My husband made do with cheap, but very good Chinese beer.

When I back packed across Europe years ago I carried a bottle of cassis syrup that I would mix with sparkling H20. That was quite delicious. Not the Creme de stuff cause this was Europe on $10 a day.

I have some Bols Creme de Cassis that my mother got from a college roommate c. 1972. Let me just say that it does not improve with age.

You might like to try rum. cassis and hot water. Especially good when you are under the weather.

This is great! I've also been thinking seriously about cassis lately. My favorite use for cassis is the Chimayo Cocktail, one of the few great cocktails made with tequila. And unfiltered apple cider ('tis the season). But it's only great if made with real cassis - definitely not Bols ;)

I just posted the recipe on my blog last week, but it's all over the internet too.

Drunken Botonist. LOVE! LOL!

Hmmmm....those French. Isn't white burgundy ahhh, chardonnay?
